Na, just the exposed stuff. Get it all put together then sand the surface
only the part that will have contact with the person sitting / handling it -- the 'bottom' of the boards, not so much so, but all edges and areas that will have skin/clothes contact

yes - Always sand especially if you plan to paint or stain afterwards. This will just look so much better. That wood isn't always the greatest and many times especially after it's taken a part you may need to also cut the bad edges.
