Wait until the sword-like foliage dies back on its own. Then simply trim it off and throw it out.

I wait until they die back naturally from the cold. Then, I cut back all the dead foliage, rake or pick it up, and put it in the trash. This removes places where bad bugs can hide throughout the winter.

Hostas yes. I'd wait until they go completely dormant and then move the roots. The hydrangeas can be moved in early spring.

You really don't need to protect roses in most gardening zone. They are quite hardy. A bit of mulch won't hurt.

I'd move it in the fall. Wait until it gets cold but you can still dig in the ground. Dig around the drip line (the furthest extent of the branches) and dig a corresponding hole as wide and deep as the original plant is growing. Move it and water it well. Good luck!

Depends on where you live. Check the back of the seed package. Most greens will list the days until they are ready for harvest. You want to harvest them before the frost date for your area. Alternatively, you can use a row cover to keep frost off of them and keep planting until a hard frost.
How do I keep squirels from eating my perinal bulbs?
There's a product called Ropel that I've used that works great. II's a spray that you buy at the garden center. It makes the bulbs taste bad but won't hurt the animals. Just follow the package directions when using it and wear gloves. If you get it on your hands, your food will taste bad for a few days too!

It came up from the original root stock. Most commercially grown roses are grafted onto hardier root stock. What a lovely rose though!
Not necessarily pruned, but pick up the brown, dead leaves and discard them in the trash. If you leave them in the garden after the leaves have died off, insect larvae can hide underneath through the winter. By removing the spent leaves, you take away their hiding spot.
