What kind of trees are they? Is the soil soft enough to work around the roots?You can use wall block.
You can put down plastic with pinestraw or mulch over it, or flat Rock with pea gravel in between them

I cannot get this to hyperlink, however bear in mind, this is the drip line, or critical root zone of the tree.
As long as you don't disturb the roots you should be fine. I would not put down plastic in that whole area as the trees would not get water from that area. If you want to prevent weeds go with a fabric type, then put down your mulch.
