I put lazy Susan's in my bottom cabanits so if I'm not using an appliance, can opener, toaster, etc, I can store them, I have loads more space. The lazy Susan's allow me to also access my appliances when I need them, quickly and with no fuss
If you have drawers you can open them and lay a cookie sheet over it to give you more space. You could also make a wooden piece that fits on the drawer once you open it, add 2 blocks of wood at each end of the piece (thinking a piece of sealed wood) so that when you open the drawer and sit the piece on it, it won't slide back and forth... I used to have a very small kitchen with almost no counter space and this is what I did!
Thanks for the ideas!! We are thinking of taking out our broken dishwasher and putting in extra cabinet space! I prefer to hand wash dishes, with arthritis it helps! Two for one!
You could use stackable shelves in your cupboards to store items. I do like your idea of getting rid of the dishwasher. Our's has been broken for 2 months & we're finally getting a new one but to be honest, I've gotten used to hand washing them now. Sounds like that's your solution!
We installed spice racks above the counter to put spices and other knick knacks - those small things take up so much space!
