You could buy wooden disks at Michaels ( or other craft store) and paint them to match your cabinets or knobs...drill a small hole in the center for the screw and mount them between the knobs and cabinet door.
Replace with metal washers. Can be painted to match or if stainless steel screws just settle listing hardware.
