I make a cucumber salad by slicing 2 cucumbers in (thin) slices and add a grated carrot and some finely diced shallots, sometimes some chopped parsley. . For the dressing, I whisk 2 tablespoons vinegar, 2 tablespoons honey, 1 tablespoon Dijon mustard and a cup of mayo. I add salt and pepper to taste. Before mixing with the cukes, I make sure to taste the dressing for seasoning. Enjoy!
