It looks to me like a good handyman could fashion something that attaches where the tray attaches. Without physically seeing it's difficult to be specific.
Here are a lot of photos of armrest tables that slip over an armrest. Maybe you could find someone handy that can build one for you. If you were local I would be happy to build one or two.
