Of course, you can, just plant as you would in the garden, just make sure you keep them watered.
You can also put them on skates and move to follow the sun!
I did beets in pots last summer. Make sure you use really deep pots or they may bolt on you.

Ohhh Potted root veggies are fun and easy! Carrots, beets, onion, potatoes need deep loose soil, with plenty of watering to promote root growth (the vegetable).
I would add, in the case of potatoes, add more soil on top as the season progresses because they grow up, down and all around! A fun one to do with kids!
