A Tile roof would look great, but can be expensive. Also a colored metal roof Would look nice as well. They have some beautiful colors now.
Oh my goodness. While I understand why you want to put a roof on it, it's sort of a shame...that beautiful tree is such a wonderful "roof". Absolutely beautiful!
Since you must, I agree with Screamer 7587 that a colored metal roof would be gorgeous (maybe copper?)

I love colored, corrugated steel roofs, but I also love a "living roof," that's covered with soil and planted with native grasses.
Clear sheets like they use on buildings so the tree and the sun and stars can be seen will also bring out your wall colors, some looks like tin but clear see thru. Then string lights on the beams??? Just a thought...
Unless you use flat polycarbonate sheet, the installation of a clear roof would be a bear. The corrugated polycarbonate panels are not designed for angles. Maybe a membrane roof using EPDM. That material lasts forever and is not affected by being under a tree.

I own Cinderella's Castle Scottsdale. It has a roof like this but more pitch like you mentioned yours does not have a big pitch. Take a look at mine it was not easy for the roofer to do but it is cute and my vacationing ladies retreat women like it. If you go on facebook you can press the see all button to see all the photos. It was built for a playhouse for my girls and as a designer I turned it into a guest cottage for a lady wanting to come for a getaway. I would love to hear about your wine bottle wall if you can get ahold of me as I have saved tons of wine bottles for a project.
