I just finished my bathroom twenty minutes ago with an amazing product called smartcore linoleum wood. No glue necessary and it is totally water proof and sealed. I got cottage (oak?) wood slats. It's a wonderfull grey-greige and it was about 40.00 for the box. Maybe 50.00, I forget. I got it at either Lowe's or HD...I bought it last year, but am just now doing it.
You would need to have a level floor to begin with and a sub floor on top for the best results ! Good luck!!!
I remember that stuff! Sorta like wallpaper colored paneling! The wood look peel and stick tile I've seen is a floating floor, meaning it doesn't actually stick to the floor. That would make it tricky to hang on the wall. If you get real wood, rough up the paneling with s course sand paper, and use construcation adhesive and small nails to attach it. Then seal the wood with the sealer of your choice.
Hope that helps
