Hello Kate; I clean my Electric kettle with white vinegar. I use a soft cloth with the vinegar on it.
Also, I clean the interior of the kettle with the vinegar. I add about a half cup of vinegar and fill the rest of the way with regular water. I bring to a rolling boil and then let it sit.

I agree white vinegar.
A cup of vinegar and water, bring to a boil, shut off and let it stand for a few minutes, should get rid of the mineral deposits. Just like cleaning a coffee pot.
