I would build a wooden enclosure around the 3 bricks that jut out, then go from there. You can get as fancy as you want.
Would something rustic fit your décor? You can use a French cleat and concrete anchors to hang a large barn wood beam
A picture would be Moore appropriate. It is difficult to envision what you mean by "the bricks are built jutting out"

Why couldn't you build the mantle completely encasing and using the bricks as a structure support...it should make the mantle piece look suspended you could anchor it from the inside I would think
That fire place is wonderful and a ez fix. Have a wide board mantle shelf go the width of the fire place and as wide to cover those corbels sticking out, liking a floating book shelf cover. I would paint the fire place and here is a photo to tie it all togethe.
Kohls has a lot of unusual classy mirrors or hobby lobby does to that would look perfect over the new mantle. Makes a perfect focal point to that fireplace.

I would add some bolts into the mantel itself, then I would use a mason drill bit to make holes to line it up with the bolts on the mantel..... set it in, use epoxy in holes to make permanent.
Ophs forgot to say I would drill a hole into the top of each brick corbel to line up with the bolts in the mantel to just drop it in.
