Bamboo flooring often has a thick sealer because owners want a really shiny surface. That makes it hard to restain the bamboo. But you can sand some or all of the sealer, but this is one flooring that you don't want to sand to the bare wood. It takes finesse for this job. If you get down that far, restain, let it dry thoroughly and then reseal to your taste.
If you would rather do a dark paint wash, you can gently sand what amounts to the top coat of sealer, clear all the dust off the floor again, apply a coat of thinned down paint 1:1 in the color of your choice, and reseal. If you are careful and lucky, your floor will have almost a 3D look because of the stacking of the stain, sealer, paint wash, and more sealer. Best wishes 😇

I have a feeling,you can't stain Bamboo, you can only Varnish it or Paint it?
