Well cast iron is really heavy and require substantial beefing up of the cabinet. Porcelain can chip and stain but i like them. Stainless is the easiest to care for, easiest to install and the cheapest.
stainless is the easiest to clean. porcelain can stain, cast iron can rust.
Stainless steel for me every time!
Porcelain is the prettiest but it can be fragile. Stainless never looks good once you use it. Cast iron is king but it is costly. If you go with cast iron you usually have to pay more to get a bright white, but regular white is OK.
There is also a Corian sink if your cabinet is wide enough.
I've had my stainless sink for 43 years. I scrub it down regularly and it looks great. No dents. Even the hard water buildup is easy to take care of if you stay on top of it. (If you have hard water! )
There's another option: they make sinks with composit granite or other stone. My sister in law got one in black and swears it's the easiest thing to take care of, and doesn't chip or dent. (She's got two messy boys plus a really messy husband, and always a sink full of dishes, so it's well tested!) π
