Rain rushing from canales have washed away the sand under a flagstone
patio. Best fix please

Get a bag stone or rocks place area wash out replace with sand.
You definitely will need to replace the sand and see if there is any way to redirect the water coming from the canal in the future.
You are going to have to remove the flagstone, if possible and reinstall the sand for a solid base.
