I recently used rustoleum weathered wood product and several websites said to use satin matte poly.. it soaked right in, I wanted little shine and protection. What would i use?

Many people make the mistake of only putting on one coat of spray poly, thinking that will be enough to protect their piece... It's not! I would start by adding additional coats... Go ahead and use up your can of matte spray putting on additional coats. When this can is used up, pick up a can with more shine and continue until you feel you have the shine and protection that you were looking for.
Put on another coat........
Korrina gave good advice! One thing that will be helpful is to lightly sand with 400 grit paper between coats of spray poly. The final coat does not need sanded.

I think the reasoning for the satin matte is to make it look more realistic...If you go to a different finish it may be too shiny, I think you might try a semi gloss but would try it somewhere where you can hide it if you don't like it.
You can do a satin or semi gloss poly. In my opinion, satin doesn't really have much sheen, so if you want it shinier, I would go with a semi-gloss
I would go to a gloss finish. All sheens dull with time. So using a gloss, would naturally tone down to a satin finish after a few weeks. It would just be very shiny to start with. :D
