We put up what is called half-bricks in our kitchen and many people have remarked on its great look. Go to a lumber store and they usually have them. They come in packages so you will need to figure out how many you want before. They are put on with just a trowel and a mastic or cement base. Have had them in place for over 40 years now and they still look great. To Clean just scrub with water and a gentle brush. So Easy.
Ohhhhh my goodness, there are tons of ideas out there both on Hometalk and Pinterest. Look at the decor of your home and decide the look you are going for. I would definitely go over it with a sealer to protect it.

Have you thought of stenciling it? You could use multiple colors and any design you like. Seal it with an acrylic sealer. Hope this helps.
I bought a sheet of wainscoting and used it for my backsplash. After painting, I sealed it about 4-5 times with polyacrylic to make it waterproof. This was about 8 years ago. Have never had a problem with it and it wipes right off. Fairly inexpensive to do.
