I have seen landscaping."straw mats" (being used on some of the DIY network shows ..Vintage Rehab... I think) to cover muddy areas and hold the soil during winter months when they were unable to landscape. This might be better than plantings that would need to be removed in the spring.
straw....don't plant but throw it over dirt
