Remove it?
either remove it or lighten it with a white wash
How about just painting the groove ( I’m calling the cuts every 5” or so “grooves”) a snappy color? The Ralph Lauren Suede paint hides a multitude of sins . . .the hardest part of this job would be taping the grooves for a nice, clean line.
You could use stencils and put a cool pattern on it. You could also put a pretty fabric over it using starch water. And, last but not least, you could install shelving right over it. Good luck.

You can bleach it or stain it.
Fill in the groves an wallpaper over it. I didnt do it, but i know two homes that did and it is BEAUTIFUL
Depending on where the paneling is, I would put tile over it.
