It seems the only way to have seating and a two person bed in that room is an inflatable bed, a sofa bed, or futon. There are also club chairs that open onto beds and of course bunk beds. If a 5 x 6 ft bed takes up the entire room now, you have to consider folding beds if you want to have a dual purpose room. Folding beds can be made more comfortable with an inflated matress on top.
I would put a murphy bed in right where it is right now..... the only obstacle I see is the ceiling fan light kit. You should be able to either install a smaller light kit on the fan, or replace it with the newer style that is more flush to ceiling. https://www.thespruce.com/diy-murphy-bed-projects-every-budget-4110832
The bonus is you can make a desk under the murphy bed that revels itself when you put the bed up.

If you got rid of the double bed, and got a single bed instead, this would immediately give you twice the floor space.
Keep a separate mattress under the bed, for the rare times when there are two persons sleeping.
If it was in your budget, I would suggest a trundle bed.
I think turning it into a murphy bed sofa is the way to go!
Murphy beds can be vertical or horizontal.
I had another thought, you could use a convertible sofa. These are actually comfortable to sleep on.... https://www.wayfair.com/furniture/pdp/zipcode-design-bianca-convertible-sofa-zipc1827.html and fold flat in minutes.
i like my couch ... the model i have is a jack knife style. find the lever, click it and the back lays flat. more of a twin size.
I had another thought, how a bought a convertible sofa, these are very comfy and fold up in seconds. These are not pull out, they just fold flat..... https://www.wayfair.com/furniture/pdp/wrought-studio-porcaro-wood-adjustable-wood-frame-sleeper-sofa-vrkg6174.html?piid=23436840
