I have a similar countertop. I plan to paint it to look like granite and I think the paint and several coats of sealer will do away with the current texture.
There is a countertop paint kit available on Amazon made by Giani. Reviews have been very positive. Don't know if it would cover the texture but, depending on the finish you choose the texture may enhance the new look.
Would you consider contact paper? I know there is faux leather contact paper you can purchase
A few coats of a high build primer should eliminate the texture.

I am currently dealing with this same hideous issue! My bathroom countertop looks like someone had put wrinkles skin over it. This post has been the only one I've seen about trying to get rid out it without replacing the entire thing. Im wondering if you have tackled this issue, and what you might have used or what you think might work.
they do have a kit for painting counters, i think it's Melamine
I am also in the same boat. (The things people did to Homes in the late 70s and 80s!) I have also googled with no luck. I appreciate this post and I am going to try some of these ideas. I will post pics as soon as I have the projects completed.
