Behind the sink? Easiest and cheapest is high-gloss/water resistant paint that water will run off of and head back to the sink. Make sure that the counter does not drain toward the wall and seam is grouted well.

I actually used 18 x 18 peel and stick laminate floor tile and silicone caulk to stick it on and as the grout. It came out Fabulous and as long as you leave no holes for water to get in, it works forever!!
