Make a curtain and attach around the sink using Velcro. Quick, easy and inexpensiv.
Try putting a glass or wooden shelf over the door inside the bathroom. That's what I did and it held towels and extra tp.
My grandmother put fabric around the one she had in the small bathroom off the kitchen in her house back when I was a kid. Of course back then, there was no Velcro, but she glued it on and it hid her cleaning supplies and a couple of rolls of toilet paper. Choose a fabric that you like that will go with the colors you have in the bathroom or another adjacent room, I would stick with a light neutral background and not a huge print, but a print of some kind that you like. If you have a nice shower curtain, maybe you could get another and use that to make the curtain around the sink.
Home Outfitters and Bed Bath & Beyond sell great storage shelves for under sinks. You could get those and then use some wood to make a box/frame to fit the space and use a curtain, make a door or use an old cupboard door to close out the front. Then when you move you can easily take the box out and keep the shelves for your new place.
