Why smooth it? Place the new mortar and go.

If it's really uneven, the self leveling is a good idea, but if it's relatively smooth, Mark is right. Put down your thinset and place tile.
Self leveling compound is relatively simple. It only requires a trowel, for the most part. No dust or dirt. It's just an extra step and so your job will take a little longer.
