You would need 1/2 inch tongue and groove plywood to do the best job of levelling it out.
Subfloor 3/4" plywood
I would make that 3/4" exterior grade plywood.
I recommend contacting the manufacturer as some of them are very specific about underlayment, temp, etc. to keep the warranty valid. Also, some of the new luxury vinyl planks have underlayment while some are very thin and any imperfection below will eventually come through. Some also do not recommend OSB.

I agree with the thicker exterior grade plywood, it would last much longer and be more weather resistant.
That does not call for a simple answer. You may create more problems if you do not let an expert look at your particular situation.
