Laminate countertops can be repaired and renewed with paint, tile, vinyl coverings and refinishing kits. Hi Majikman4,
Many people paint their countertops to update them and make them look better. You can do a faux granite or marble look, as well as just paint it a different color. Click below to see some that fellow Hometalkers have done. Read as many as you can as part of your research until you can choose one method and feel confident that it's what you want. The key to longevity is to make sure you uses several coats of sealer when you've finished painting. Once it's finished, you will have to remember to never put hot pots or pans on the surface without a hot pad. You can add a coat of sealer every few years, to keep it looking great. Wishing you the best.

I have redone a counter. There is a kit at Lowes that is specifically for use on a counter. I am sure other home improvement stores have them as well. The directions were clear and it was easy to use. I would suggest looking into something like that.
I have used Rustoleum stone spray on rental countertops and after 10+ years it is like new. You need to lightly sand the countertop and then prime the surface with a quality primer (I used Kilz). Spray light even coats until you are happy with the coverage, then apply 2-4 coats of a sealer (I used polycrylic (doesn't yellow}.
I have also been looking at a company called Instant Granite (both are sold on Amazon) for the countertops in our new-to-us house.
I don't like the look of the granite paint kits as the finished product is only as good as the person applying the granite effects, which would be me lol!
