Do you mean the soffit? There may be electrical or plumbing or maybe support beams. (I'm gonna stick with soffit) dealing will probably depend upon your need and your skill level.
Been a homebuilder, remodeler and never heard soffits called furr downs. May be a regional term. You may run into wiring, plumbing, and unfinished wall and ceiling. Have removed many in my time and generally everything can be moved and relocated. Does take some skill in plumbing and electrical. Framing and drywall is simple.
