Kids love to grow sunflowers & they are easy to grow.
plant with her, and plant her favorite veggies, if she likes salads, grow salad greens of different varieties. if she likes corn on the cob...grow some corn. does she like popcorn? yup, you can get seed to plant your own popcorn plant. get her a set of garden tools scaled so she can use them- big box diy stores should be stocking them soon.
There’s so many things you can do to get kids into gardening, really the list can be endless just depending on how interested the kid is? But least to me and knowing my own kids and other kids I been around. Growing things kids love to eat certain usually will peak their interest! Growing steawberries, blueberries, raspberries, etc. cab be a great way to peak a kids interest. As well as growing fruit trees! There some nice miniature trees that kids could easily get into planting and watch grow and eventually be able to harvest their own fruit! The rewards of juicy fruit and berries could help peak a kids interest into growing more vegetables in the garden too! Find what the like most and work from there! After all, even as an adult I still don’t like growing things I don’t particularly care to eat! Not a bad idea to show them a little cooking skills as well with whatever they decide they want to grow and let them have a full experience of planting, harvesting, preparing and cooking it and finally getting to sit down and enjoy all your efforts eating what you grew from a seed or sapling!
I would plant sunflowers! They are super easy to grow....get REALLY tall and are like magic beans to little kids! Plus, 6 year old girls will LOVE the 💐 flowers!
If it's the season for planting Outdoors, allow the child to drop the seeds with you in place. If not the season, start by planting in cups. Fun for that age.

Have her assist you with fast growing vegetables. Radishes are fast growing.
start small - I love raised beds and the most important part of the process is establishing good soil. I have lots of tips do you have any specific questions?
Start your seeds now in little pots. That's something you can do inside if it's too cold out and she can tend to them everyday, then when the ground is warm, you can plant them outside. You can cut the eyes off of potatoes and root them in a large pot, they grow fast too.
Let her pick out the flowers she thinks she likes and start the seeds in paper or bio-degradable pots. It is also fun to make your own paper pots, she can help with that.
Chubby58 suggested potatoes, what a great idea.
