You can find “snap-on” plugs in any good electrical department. Cut the cord to your length and just click it on.

Check where the switch is on the cord before you shorten. On mine, the switch is only about 12 inches from the plug.
The plug at the end can be removed and a new one properly added.
I would not shorten it, you may want that length back in the future. If you are hanging it from a hook, coil the excess, wrap center securely with tape that blends with the ceiling, and hang the coil on the hook. When you move it n the future, you may need the length.
Have your electrician put up a box and wire mold the cord to the switch.
You can just cut it to the length you want and use a click on plug. I would not recommend this if the light fixture cost a lot.
home depot and lowes and other hardware stores carry longer cords, just figure out how long it needs to be and rewire it.
