How about a Roman blind? It made add some softness & the needed privacy at night. You could take it up to the height of the ceiling, allowing it to make the window look taller!

I use a tension rod in my kitchen window, and clip rings. Only close the curtains at night. It's not very big, so 36 in. length work well, and I have several pair that I rotate for the seasons.
you can add a bamboo roll up shade, a Roman shade or just hang a nice valance. If you are creative, make a Cornish to hang above the window.

Your window needs any sort of fabric to soften its appearance. Any sort of window treatment that you like will do. Make sure it goes well with your kitchen decor. Best of luck to you.
Just a piece of fabric you love attached cut to the correct size and attached o the frame at the top with push pins would be good to try temporarily. Then maybe use two pieces of ribbon cut long enough to gather up into a type of decorative "header" during the day. Try it out before going to the expense of a rod and curtains.
IMO, Roman blinds over a kitchen sink are not practical. The fabric will get splashed with water, soap, and even liquid food spray, which will stain the fabric and will be difficult to keep clean.
My suggestion is to go for split plantation shutters, as they are easy to clean, and offer the most versatility in providing privacy and light. The hidden tilt option eliminates the centre rod, which makes the window look larger, and does not impede vision.
