Look into Arden, a skim concrete that you put over your laminate with some prep, obviously.
diy epoxy! This stuff to me is like gold!! https://www.stonecoatcountertops.com/
I personally think that you might have trouble with the film due to the heat of your burner unit. Of the two choice you mentioned, I would choose the paint, dabbed with several colors to make a faux granite look. The feathered concrete is another option, but no matter what you choose, you need to do a lot of research to figure out the best method and which will last the longest. If you use anything that raises the height of your countertop, you should also decide about removing your sink & burner unit so that it can be reinstalled at the correct height. These are just some things to think about to use in your research so that you enjoy your new countertop. Wishing you the best.
I think an epoxy layer would be best
I agree with Linda Sikut, I would paint. You have many more option, the color of the paint, and the design. You could go for a faux marble look, running a feather through to create the "veins", or even plaid or polka dots! The sky is the limit! Just be sure to seal it with a food safe sealer when finished painting. You want to protect your paint finish, as well as yourself with food touching it! Share your design when you finish!
