you can use a peel and stick tile
ilook at doing a ship lap type using the slats from faux wooden blinds (attached with glue) or the ‘tin ceiling’ tiles (found at Lowe’s and Home Depot, also attached with glue), you can also get press and stick tiles that will work. All of these treatments require nothing more than a measuring tape, scizzors and perhaps an exact knife to install.

Backsplash can be tricky, but you can do it. There are many types that you can use. Homedepot has free classes on how to do home projects. Call the store, if you have one in your area. Tell them your interested in doing backlash for your kitchen. You can also pick up a book or two at the library on kitchen projects. Also Homedepot has books near the registers on all kinds of DYI projects for the kitchen. The price varies on what book you choose.
We faced putting up new backsplash on a home we needed to sell. We had no experience and short on cash. We found tin type backsplash at Lowe's that looked like tile but was all one piece that could be cut to the proper size and shape. It was easy to install and looked really nice. It came in 3 colors: tin, copper, and brass looking types. Anyone can install it. Other home improvement stores probably carry something similar also. It saved us time, money, and looked very nice. Absolutely! I just did mine with peel and stick tiles. Got them on Amazon.com. Only requires a pair of kitchen shears. Good quality, no cheapies. Or a utility knife. Please do buy a straight edge. I used metal ruler. Measure 3 times-cut once. The tiles I used were Tic Tac Tile. They do stick really fast, so do a trial run after you cut, but before you peel the back. I’m 72 and had no problems.
I’ve heard of people using a glass pool fence panel and painting one side and having the other facing out and silicone against the wall. There are toughened glass are relatively inexpensive, and come in a range of sizes. They can’t be resized though as toughened glass can’t be cut
