They are not a live, they seem to be a plant that grows under ground but nothing comes up only find them when digging. I did notice that they are a lot together on a vine like root.
I thought the "roots" were the mouth of a grub. However, your County Extension Agent should be able to help you identify them. To me they sound like tubers from a vining plant that is probably a noxious weed. If they are what I think (Purple loosestrife) they are beautiful when they bloom but will choke out everything else and you can be thankful that they are not growing.
Looks like Florida Betony AKA white rattlesnake weed( Stachys foridana) according to what I could find. If so the roots are edible. See at 40acreswoods.com

Those are not grubs. Grubs are C shaped and look like caterpilliars. These appear to be some sort plant root
They are tubers. They should be rigid and relatively easy to snap. Did you rinse them before taking the photo? I thought so. Did they wiggle or move at all when you handled them? I thought not. Without this additional information, I can only say that they are tubers, not grubs.
