Shorten the height? or shorten how wide the cabinet is?
Why? you would have to take it down, demo the cabinet by sawing off the height, and then rebuild the internal structure to maintain the integrity, then you would need to shorten the doors and route the edges to match the existing ones.... a lot of work.
Would be easier to visit either Habitat for Humanity Restore, Lowes, Home Depot or an architectural recycler to find some shorter ones and replace them. You can find many used cabinets especially those over the frig ones.
We recently had a top cabinet shortened, the one over our new fridge was too long for the fridge to fit under, we took the cabinet down and took it to a cabinet maker and he took 1/2 inch off the bottom.
