I would suggest leaving Several colorful cutting boards, with a note saying they’re dishwasher safe. Put them in a pretty basket or serving tray on the counter. TJMaxx sells them in packets of three - get two. Also get several smaller boards for lemons and limes. It is the shore!
Im sure you know to leave a note re rules and equipment usage. Mention the cutting boards.
Leave a friendly note in a Dollar store stand-up plastic frame on the counter itself, near your cutting boards, saying Please Don’t Cut on Me - I’m a Counter, Not a Cutting Board. My friends are dishwasher-safe.
Have several cutting boards available, have them marked appropriately and leave a note requesting they use the cutting boards, not the counter.
In addition to the cutting boards, you may want to look into renting with AirBnB. They have a system of grading guests and hosts. You could limit your guests to those who have earned four or five stars. That way you have a better chance of compliance with the cutting boards.
