Sounds lovely! Tiling is a pretty easy job, just be sure to get your mastic on using the correct size notches, your spacers, and the right consistency of grout.
I would put a pop of color in the backsplash, maybe some glass tiles with blues and aquas. When everything is one main color it tends to all run together, that’s just my opinion.

I purchased the sheets of small hexagon tiles in a 12x12 sheet. The lovely stone color in bout 3 diferent tan shades. I put them above all the counters in my kitchen, up to where the cabinets start. Then i used a grout that matched my off white appliances. It really makes it look nice and tuned out great. Lowes has many diffeent colors and designs. I was a beginner and found it easy to do.
I recently bought the very same thing for my kitchen. I painted my lower cabinets a navy blue and added copper hardware to them. Removed all of my upper cabinets and am going to hang White subway tile soon with gray grout as well. It helps hide stains and it’s very easy to clean and keep clean. Then I’ll be hanging metal industrial piping for my stained wooden shelves for open shelving, I’ll be putting up over the top of the subway tile. I can’t wait! I think you made a great choice.
