Raised beds would be a cool idea. Would keep from erosion for your plants
Easy peasy. Just make them level by having the down side slope higher.

I would build terraces on the slope. I love how ground cover plants can spill down a terrace.

Build with wood or make with stone basically going to need to do almost a step style to meet the needs of that slope. Have you thought about a rockery concept? I'm going to attach a link - the second picture in this post was from my grandmothers rockery, was so pretty.
