My girlfriend made a shelf and used it for a few decorative (easily washable) decor pieces. Her mom' favorite salt and pepper shakers, a pretty mug, a vintage vase, etc.
You can get a replacement hood, it will give you light above the stove, and there are types that don’t need to vent to the roof, they have a filter on them instead. It took me longer to get the microwave down that to install the new hood.
Perfect spot for a pot-filler!
You can tilethe area and add built in spice holders,
or you buy a used cabinet for storage and add lighting under the cabinet for cooking.
If its one of those wood built-in cubbies, I think I would put all my cooking oils, and spices I use daily. Maybe even add a paper towel holder.
Anything you put there will get greasy from cooking fumes.... and should be washable... Why not just fill the area with a pretty tile... like an encaustic or talavera tile.... or even a tile mural
