What is your water source? Off the grid home? Look into composting toilets. Building codes specify what is to be used and how it is to be installed. Check with your permit office and see how much leeway you have.
As far as pipes, look into pex piping. We built a 3200 square foot house and that's all we used. Here's a video about it.

Hello Robert, Agree with above we did our bathroom gut remodel with Pex, Did prefer push in fittings rather than the crimp ones due to leakage experiences. PEX seems quite diy friendly.
