Might have to use a chisel to remove but some new backsplash have self adhesive backs makes it easier to do
We didn't remove our old backsplash. Instead we bought some pieces of faux copper metallic backsplash. It looks like individual tiles but is actually one panel that is very easy to cut to size with scissors. Home Depot cut the panel to a size that we could work with easily. The back has adhesive and after cleaning our old backsplash real well, we simply cut and pressed the new material on top of the old one. No one can believe it's not made of genuine copper tiles. That was a couple of years ago and it looks brand new.
