You will probably need to do some excavating to put in some drainage rock under your shed, but you do not necessarily need to level it completely. Instead of putting your shed directly on the ground requiring the ground to be level, put it on blocks. You can adjust the number and height of the blocks easily to achieve a level shed floor. You may need a ramp or step to get into the shed, but that might be easier than trying to conquer the grade issue.
I built my garage workshop addition on patio blocks every four feet along the perimeter and center. Just used extra dirt under the blocks to level the floor. I just use landscape fabric over the ground.
