What is the softest and best quality baby fabrics that won’t shrink?

You always wash and iron your fabric before starting a project. Google or look through the yellow pages for a seamstress in your area. Quality of fabric depends on where you shop. Look at the fabric content and washing instructions on the end of the bolt. If you are making, why do you need a seamstress? For babies and children, I tend to favor natural fabric, typically cotton. Polyester for the fleece or furry fabrics that some items require. Always machine washable.

Maybe some of that peachskin fabric which is very soft. I wouldn't use flannel as its pretty flammable, and many crib items get recalled because of it. So if you want to use flannel, be sure its rated... non-flammable.
It is cotton, but you should wash the fabric before copying pattern and sewing.
