Personally, I bought a pineapple cutter, which cores and peels it at the same time. Cost about $10. They can be found at any kitchen store, and occasionally at WalMart or Target, etc. Can also be ordered online from various sites.
Alternatively, you can also do the following: use a very sharp knife, and cut off the bottom of the pineapple, so it will sit reasonably flat on a surface. Then slice down the sides to remove the outside eyes, similar to the way one would remove corn from a cob. Go completely around the outside. Then cut off the plant top (which can be used to hold onto the pineapple while you are cutting around the sides to remove the eyes). Then turn it on its side and cut across the pineapple, making 1" thick slices. You will need to core each slice to remove the hard center core of the pineapple. Then you can either leave it in slices, cut into cubes, or crush it for various recipes.
