What can I do about my sink that separated from the countertop?

you can drain the pipe all will be fine
Adding onto what Pierre said, be sure to turn off the water to your gazebo, and run the pipes until the water stops. Then insulate your pipes and any faucets. Here's the faucet insulator I use: https://www.homedepot.com/p/Hard-Faucet-Cover-1981/204759083
Swim noodle cover with tape year around use
Above suggestions are great but you may also want to consider switching to pex plumbing pipe. It isn't expensive although the fittings are a little pricey. However, it expands if subjected to freezing temperatures and I've never heard of anyone have a pipe burst.
