What is the best wood treatment for kitchen cabinets?
In order to help save money in our decision to upgrade our kitchen, I decided to just keep the cabinets we have. They are birch with oak trim. My intent is to brighten up our kitchen and the cabinets had a terrible dark varnish on them which made the room appear even darker. I sanded all the cabinets and the wood looks amazing. I want to keep them the natural color they are. No painting. Since birch is a lighter wood, it goes well with what we have in mind for our backsplash and new flooring. The problem is, I'm not sure which treatment to put back on the cabinets. There are so many choices! I want to keep the cabinets the natural light color they are currently and I don't want the treatment to yellow over time. Plus, I want the cabinets to be slightly shiny and not show brush strokes. Looking for suggestions and solutions from anyone who cares to respond. Thanks so much!

Three coats of a water based polyurethane. Does not have a yellow tinge and does not yellow over time. Oil based has a yellow tinge and will yellow over time. Use a foam brush to apply. no brush strokes. Your choice of sheen.

Be sure to "tack cloth" all sanded surfaces, thoroughly, before you poly seal.
Apply your water based polyurethane with light coats to avoid drips. Let each coat dry completely for best outcome.
Upon finishing a length or width of coverage application of poly , take your brush very lightly over the entire length or entire width ( following the grain) in one stroke, to further reduce chances of brush marks.
