Seal by painting with a flat polyurethane, not gloss.
I would use a matte polyurethane on it , make sure to use a matte , to keep it looking natural & rustic . You can also try a sealing wax , but that might give it a slight sheen, but if it will be in the kitchen, you might want that ??? What ever you try , definitely try it first on a scrap piece of wood , or on the back.

First I’d treat it with termite killer, and let it air out. Brush off any dust and dirt.
Then I’d use a flat or matte polyurethane, water based will be fine for your purposes. Two full coats with a high quality brush.
