Hello Molly! If you like the chalk paint look--using chalk paint for this project would work great! You can either finish with a wax or use polycrylic as a finish-a waterbased poly that doesn't yellow over time. I have chalk painted coffee tables with a wax finish-they have worn well and I have not had to rewax but it would depend on how heavy of use your coffee table would get. Poly might work better for you.
If you want to stain them, use citristrip to strip all the old finish and stain off it, sand, clean and restain with the strain of your choice. To paint, sand it down so that the paint will adhere better, clean well to get rid of dust from sanding and paint it how you wish. You nay need to use something like Kilz to keep the old stain from bleeding through before you paint.

I agree with Gk! Either chalk paint or milk paint would be my go-to for this type of project.
