What kind of trees and what zone or state do you live in?
For many fruit trees and trees with blossoms such as azaleas, i wait until the blossoms fall and then in the early blooming time (June or so for our area) I cut the dead branches and reduce the branches by 1/3. The 1/3 cutting will take you 3 years and if done with patience and tender care, your blossoms will bloom like no one's business.
It depends upon the type of fruit tree. What growing zone are you in? Have you contacted your County Agricultural Extension Office? Since they are local, they know best about all things growing.
