Research different types of backsplash - the look, easy maintenance (washable), longevity ... After you decide what you want, carefully remove the mirror, then redo with what you decide. BTW: You will not be happy with contact paper. It does not wear well with constant cleaning.
You could try the sticky tile, but I'm not sure how well it will hold on the glass. The best thing to do is remove the mirror tiles. Then you can put up anything you want.
