This sound like a great organizing project! Depending on how heavy your filled totes will be can help determine if you need to work with 2X4s or plywood. Check your home stores for pre built counter tops to see if any will work. If they don't, you can cover plywood with formica laminate with a laminate glue. Also depending on the look you want, you can use plywood for your doors as well. (and you can laminate them, too, if this area is going to get splashed and you'll be wiping them down a lot) Don't forget hardware for the doors, either. Choose something that you like because you'll be looking at this project for many years!
